Salty Thin, Crispy Oatmeal Cookies for the Holidays

This crispy oatmeal cookies with a sprinkling of salt are fail-proof, thanks to America's Test Kitchen. Enjoy!

INGREDIENTS INSTRUCTIONS 2. In standing mixer fitted with paddle attachment, beat butter and sugars at medium-low speed until just combined, about 20 seconds. Increase speed to medium and continue to beat until light and fluffy, about 1 minute longer. Scrape down bowl with rubber spatula. Chocolate Peanut Butter Cup Cookies: A Recipe for a Good Day

An irresistible combo of chocolate and peanut butter.

Chocolate dough with a peanut butter cup set in the middle. Makes about 36 cookies For the cookies: 1 cup semi-sweet chocolate chips 2 squares (2 oz.) unsweetened chocolate 1 cup sugar 1/2 cup butter or shortening 2 eggs 1 teaspoon salt 1 teaspoon vanilla 1 1/2 cups plus 2 tablespoons all-purpose flour 1/2 teaspoon baking soda For the garnish: 3/4 cup finely chopped peanuts 36 miniature Peanut Butter Cups, frozen and unwrapped 1 cup peanut butter baking chips 1/2 cup semi-sweet chocolate chips Preheat oven to 350 degrees. Holiday Shoppers Rein in Spending

Survey by Georgia Credit Union Affiliates shows most Georgians plan to spend about the same or less on Christmas gifts.

Only 3.3 percent of Georgians are planning to spend more on gifts this holiday season, according to the latest poll from Duluth-based Georgia Credit Union Affiliates (GCUA). That means 96.7 percent of shoppers are spending the same or less as in 2011. The survey also revealed: GCUA reported that retail sales for the holiday season are expected to grow 4.1 percent, less than the 5.6 percent increase experienced in 2011. Also, a survey conducted by American Express and the Harrison Group found that while the top 10 percent of the population will spend nearly 22 percent more on gifts than they did last year, overall gift giving is expected be down.

These are simply delicious, and fun treats for the whole family.

Living far away from my family, I cling to the happy memories of my childhood. Growing up in an Italian household, many meaningful moments were surrounded around food. More than the holiday meals, with which we call gathered in the dining room eating on the fancy dishes, the simple times spent in the kitchen meant the most.  With all the food that passed through our kitchen, desserts were a rarity. Recipe Corner: Chewy Brownie Cookies

Give yourself a treat this holiday season with these chewy brownie cookies.

CHEWY BROWNIE COOKIES (taken from Santa’s Favorite Cookies) 1 1/2 cups firmly packed light brown sugar 2/3 Crisco stick or 2/3 cup Crisco all vegetable shortening 1 tablespoon water 1 teaspoon vanilla 2 eggs 1 1/2 cups all-purpose flour 1/3 cup unsweetened baking cocoa ½ teaspoon salt ¼ teaspoon baking soda 2 cups semi-sweet chocolate chips(12oz package) Heat oven to 375 degrees. Place sheets of foil on counter for cooling cookies. Combine brown sugar, shortening, water and vanilla in large bowl. Beat at medium speed with electric mixer until well blended.
