Clams Casino

Join these celebrated local cooks as they share their passion for food and all things food related.

We’ve always thought this family favorite to be an Italian creation, having enjoyed them at every Italian festival and gathering.  However, according to legend, the original Clams Casino was developed in 1917 in Rhode Island.  A rather wealthy patron approached the maitre’d at the Little Casino wanting something extra special for her guests.  Well, she loved their dish and listed it on her table cards as Clams Casino after the hotel. Word spread and the rest is history!

Here’s our take on this classic.  It’s simple, quick and delicious, sure to “WOW” your guests! (in a good way)

Recipe: Clams Casino

Ingredients:

1 can chopped clams, with juices
1 sweet Italian Sausage, casing removed
¼ onion, small dice
½ cups plain bread crumbs
4 shots hot sauce
¼ tsp. red pepper
Fresh ground Black pepper, to taste

(Patty adds a squeeze or two of lemon juice to the mix)

Lemon wedges for garnish

Directions:

In a skillet, fry sausage and onion.  Let cool.  Put in a large bowl and mix with the remaining ingredients. Fill clam shells and bake in a 375 degree oven for 12 minutes.

Serve with lemon wedges. Makes ~9

Clams 88, Sausage 125, Onion 45, Bread Crumbs 213, Spices 0
TOTAL = 471 that’s only 52 calories each!
