Lemon Herb Chicken

Who doesn’t look forward to Sunday Roast Chicken?  Every cook lovingly creates their own special recipe for family and friends. We love lemons!! Our seemingly sophisticated “twist” on this recipe introduces a fresh citrus flavor.  It’s quick and easy to prepare.

"So, what’s this about a proposal?” you ask. Maybe it’s the inviting aromas of lemon and spices wafting from the oven that contribute to the myth surrounding this popular folklore.  The belief is that a proposal of marriage is sure to follow if you prepare and serve Lemon Herb Chicken for that “special someone.”  He or she will be unable to resist the delicious flavors, the fragrance, AND YOU! 

Of course, we’ve made a video to assist. Hmmm…perhaps if you perfect one signature meal, it should be this one.  After all, food is “The Language of Love” and the secret to anyone’s heart. 

RECIPE: Lemon Herb Chicken
1 lb. Chicken Thighs
Juice of 1 Lemon
¼ cup Extra Virgin Olive Oil
1 tsp. dried basil
1 tsp. dried oregano
4 small red potatoes
½  medium onion
1 cup carrots
Salt and pepper, to taste

Place the chicken thighs in a casserole dish and drizzle olive oil over the top. Sprinkle the spices (basil, oregano, salt and pepper) over the top, and rub into the chicken. Squeeze 1/2 the lemon over the chicken.

Cut up the carrots, onions and potatoes into approximately the same size pieces and add them to the casserole. Squeeze the  rest of the lemon over the entire casserole.

Cover with aluminum foil and bake at 375 degrees for 45 minutes. Remove the excess fat and cook uncovered for another 10 minutes.

Makes four servings

Calories: Chicken 632, Potatoes 200, Carrots 52, Onions 20, Olive Oil 330, Spices for a total of 1234. That’s only 309 calories per serving!

This looks like a recipe that can easily be increased for larger groups. True?

Hi Cheryl, this is a very easy recipe to increase. You may want to use 2 baking dishes but it's important to cook the veggies with the chicken to get max flavors. Let us knw how it turns out!

Hi John and Patty,

I made this with a little change...I cut up the potatoes in 1" cubes and mixed them with olive oil, rosemary and a lemon cut up in little slices, then added the potatoe mix to the chicken and carrots, then sprinkled the onions on top.

It turned out really great! I love the one dish dinners! Thanks for all your ideas!
